1 - Because we spend a lot of time not stretching and not opening them.
Be honest with yourself, how often do you spend not stretching them?
Think about all the time during the day that you are spending:
You are using your hips in a limited range of motion. Therefore it tends to tighten.
The same way your body feels stiff in the morning it feels good to relax and stretch it.
2 - It is a complex area with a lot of tendons and muscles.
To stretch one group of muscles like the adductors you will probably have to strengthen the antagonist ones, the gluteus and hamstrings.
Do you know your body and anatomy?
Here are all the muscles of your legs.
I have bad news for you. There is no one for all remedy but I can assure you from what I saw in all my students is that consistent effort and persistence are the keys to progress.
3 - You need to train your nervous system to new positions.
As everything new for the body, it takes time and repetition for the nervous system to get used to it.
> How long did it take you to learn how to walk?
> How many times did you fail to try?
4 - Be honest with yourself, how often do you stretch them?
Once a week?

Once you get to a certain level you are only practicing maintenance, which doesn't take long. But to get there you will have to put in the work.
